Halloumi bruschetta

INGREDIENTS 

  • Two slices of halloumi 
  • 8 cherry tomatoes 
  • 2 tablespoons fresh green pesto
  • Half a handful of lettuce leaves
  • Drop olive oil 
  • Salt & pepper for seasoning

METHOD 

  1. Slice the halloumi if you haven't bought it pre-sliced already. Brush either side of each slice with a little bit of olive oil. 
  2. Heat up a griddle pan to a medium - high heat. Once the pan is hot, put the halloumi on and fry for around 2 minutes each side, flipping it over when you can see the griddle marks on the cheese.
  3. Meanwhile, slice your cherry tomatoes. Once the cheese is off the heat, place it on a plate and divide the cherry tomatoes between each slice. 
  4. Season the tomatoes on the halloumi with a bit of salt and pepper. Then thrw the lettuce leaves on top and drizzle the pesto over each slice. Enjoy!
